This month Chef Darren has created a new dish, 'Phuket Tune Provencal', for which he has taken the finest local Tuna and paired it with the taste of Southeast France. Served with grilled zucchini, roast peppers and oven dried plum tomatoes, presented on carrot puree, and accompanied with Chef Darren's very own piquillo pepper and cherry tomato ketchup.
